Preparation
Preheat oven to 150°C for 30 minutes.
(Utilize this time to prepare the mix)
Powder
Grind 125g sugar with 5 cardamom pods.
Dry Mix

1 tsp baking powder

¼ tsp baking soda

½ tsp salt
-
(Ground) sugar-cardamom mix (refer to 1a)

250g all-purpose flour
-
50g wheat flour/desiccated coconut (optional)
-
1 tbsp instant coffee (optional for dark brown cake)
Wet Mix (Blend Smooth)
1 banana (optional)
-
1 lemon or 3 small seedless oranges
-
2–3 eggs
-
3 tbsp yogurt
-
4 tbsp oil (or max 3 tbsp melted butter)

2 tbsp milk (optional)
Combine dry and wet mixtures into a smooth batter.
- Add 100g semi-dry fruits / white currants / cashew/walnut (optional) (mix it with a spoon)
- Line a 1-pound pan with brown paper, spray oil, pour batter.
Baking
first 40 min at 150°C
-
then 20 min at 100°C
-
finally 10 min in switched-off oven
Cool to room temperature. Slice and serve.
